Costco sells these Stromboli-style chicken bakes at their food courts and you can make them at home from scratch!

Although I have a copycat version for Costco’s Chicken Bakes in another post, I decided to perfect the dough. Most of the ingredients remain the same but the dough needed improvement. I came to the conclusion that refrigerated pizza dough is a must for that air bubbly looking dough and chewy texture. Store-bought pizza dough could work but if you can make your own you will get a lot more out of them. Besides why not make a batch and keep some fridge ready for a pizza dinner or Costco chicken bakes?

This is the homemade pizza dough I used for these Costco Chicken bakes and I cannot emphasize enough how perfect it is for this. The texture is so identical to the original! If I may add that pizza dough recipe was shared by a New York Pizza Maker and having done some batches I found which method works perfectly for Chicken Bakes.

What’s in the Costco Chicken bakes?

Costco chicken bakes originally consist of chicken breast strips, mozzarella, provolone, parmesan cheese, bacon, creamy Caesar dressing and green onions in a hand-rolled crust. Although I never detected green onions in the chicken bakes I had, I do think these turn out just as good without the green onions and addition of provolone cheese. I also like to use creamy ranch dressing instead but creamy Caesars dressing is the one they claim to use.

Can I use store bought pizza dough?

Yes, store bought pizza dough can be used if you don’t make the homemade pizza dough. However, I do think you’ll get more from making your own.

Can you freeze Homemade Chicken Bakes?

Since Costco sells frozen chicken bakes I do think it’s possible. It seems to me theres are partially baked before being individually wrapped so if choosing to do so, bake at a 10 minute period then cool and freeze. Baking time for frozen chicken bakes takes around 35 minutes in an oven and 4 minutes in the microwave coming from the freezer.

How to make Costco’s Chicken Bakes at home:

  1. Preheat oven to 450°F.
  2. Cut pizza dough into 4 equal pieces. Roll out each piece to an 11 by 8-inch rectangle. Set aside.
  3. Combine all the filling ingredients, RESERVING 1/2 cup of mozzarella, 1/3 cup of parmesan cheese and 3 tbsp of creamy Caesars dressing for the topping.
  4. Place 1 cup of filling across the center of each piece of dough. Slightly fold in the sides and start rolling dough from the bottom up. Pinch seams and place onto a greased pan.
  5. Brush tops with reserved dressing and sprinkle with reserved cheeses. Bake 20 minutes on bottom rack.

  • 1.3 lbs Refrigerated Pizza dough 1 ball of dough from my pizza dough recipe
  • 9 oz cooked chicken breast pieces
  • 2 cups mozzarella cheese grated
  • 2/3 cups parmesan cheese divided
  • 4 slices cooked bacon chopped
  • 1/3 cup creamy Caesar salad dressing
  • 1/4 cup heavy cream

Instructions

  • Preheat oven to 450°F.
  • Cut pizza dough into 4 equal pieces. Roll out each piece to an 11 by 8-inch rectangle. Set aside.
  • Combine all the filling ingredients, RESERVING 1/2 cup of mozzarella, 1/3 cup of parmesan cheese and 3 tbsp of creamy Caesars dressing for the topping.
  • Place 1 cup of filling across the center of each piece of dough. Slightly fold in the sides and start rolling dough from the bottom up. Pinch seams and place onto a greased pan.
  • Brush tops with reserved dressing and sprinkle with reserved cheeses. Bake 20 minutes on bottom rack.

Notes

NOTE: 1.3 pounds of dough is equivalent to 1 (1lb & 6oz) ball of dough from my pizza dough recipe.
Chicken breast pieces: I like to coarsely chop the ready to use Perdue chicken breast pieces from the bag as some chunks are huge. 
I love to use creamy ranch dressing in place of Caesars dressing. 
TO FREEZE CHICKEN BAKES: Follow the instructions given only reducing the baking time to 10 minutes. Cool completely then wrap each chicken bake in foil and freeze. To heat bake frozen in a preheated 400°F oven for 35-40 minutes or microwave on high for 4 minutes. 
FOR EXTRA CRISP BOTTOM: brush bottoms with creamy dressing instead of oil.
