I’m big on freshly milled flour recipes using my grain mill to make 100% whole wheat flour. I stock up on hard white, hard red, and soft white wheat for all my baking needs. These are all the grains you need to get started on making whole wheat flour at home. We use soft white wheat (low in gluten) for all dessert or quick bread recipes and hard wheat varieties (high in gluten) when baking yeast or sourdough bread.
