White Chocolate Chip Cookies

These White chocolate chip cookies are soft and chewy and SO delicious, making it a perfect Holiday cookie! Make them festive by adding sprinkles or leave them out to make a simple chewy cookie! 

This white chocolate chip cookie recipe came to be, after my daughter made these peanut butter blossom cookies and accidentally switched the baking soda and baking powder ingredients… Well the peanut butter blossoms came out a bit more spread out then usual but the texture of them were right on, soft and so chewy! After wanting to make cookies from white chocolate chips on Pinterest and tweaking the blossoms recipe, these were created, and are they FANTASTIC! 

 

Tips on making White Chocolate Chip Cookies:
  1. Butter can work as a substitute for the shortening and to get the butter soft fast, simply microwave a stick of butter for 30 seconds rotating it on all sides every 10 seconds. My favorite way to use soft butter when I decide to make something last minute. 
  2. For crackly cookie tops, lightly pat down the tops of the cookies right out of the oven using an oven mitten. this deflates the cookies and leaves cracks. 
  3. To have white chocolate chips poking out of your cookie simply insert 2-3 chocolate chips on the tops of warm (out of the oven cookies.) This method works best when cookies are still hot as the cookie is very soft to work with. 
  4. This cookie batter is very soft and needs some chilling. But the good thing is even after an hour in the freezer it was still easy to scoop and work with. 
  5. This white chocolate chip cookie dough spreads much when baking so it is crucial to roll these into balls and just lightly push tops down before baking. Dropping this cookie dough or flattening too much can result in very flat cookies.

Ingredients for White Chocolate Chip Cookies:
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup shortening
  • 4 oz cream cheese, softened
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 3 TBSP colored sprinkles
  • 3/4 cup white chocolate chip cookies
How to make White Chocolate Chip Cookies:
  1. Mix the first 5 ingredients until fluffy. In a separate bowl stir the dry ingredients together and gradually mix into the sugar mixture. Fold in the sprinkles and chocolate chips and freeze dough for up-to 1 hour for easy handling.
  2. Preheat oven to 375°. Scoop 1″ balls onto a baking sheet. Lightly push tops down, placing dough 2 inches apart. Bake for 13-15 minutes or until edges look lightly browned and centers are very soft.
  3. Lightly push down tops using an oven mitten to crack tops and insert 2-3 white chocolate chips over the tops for an extra garnish. (This is optional.) 
  4. Happy Baking!
