A tried and passed down Zuppa Toscana Soup recipe that my brother-in-law shared when he worked at Olive Garden years ago. This is the EASIEST Zuppa Toscana soup because it's done in one-pot!
6Golden potatoesskins on & washed well
2 1/2mild sausagescasings removed
6slicesof ham (diced)can sub Canadian bacon or bacon bits
1tspchicken bullion powder
1/2tspdash of cayenne pepper
1 1/4cupheavy cream
8ozchopped kaleabout 1 bunch, stems removed
How to make EASY Zuppa Toscana:
In a large pot, saute the onion, sausage, ham and garlic for 7 minutes or until tender.
Add the water, salt and chicken bullion powder: bring to a boil. Add the potatoes and simmer 25 minutes.
Add the cream, kale and cayenne pepper. Bring to a boil and turn soup off.
Garnish soup with freshly gated parmesan cheese before serving!
Italian Sausage Substitute:
Can use seasoned ground beef in place of the Italian Sausages. NOTE: Ham works as bacon. Either one will work. Canadian Bacon is best! Chicken Bullion Powder: Can omit bullion powder and use Chicken broth instead.
