Meatloaf Muffins

These Meatloaf Muffins have couscous and you can't even tell! They are healthy without compromising on the classic meatloaf flavor! 


Meatloaf muffins:

  • 1 lb ground pork or any meat
  • 1/3 cucumber english/ grated
  • 1 bell pepper Orange / grated
  • 1 onion small/ grated
  • 1/2 cup couscous uncooked
  • 1 egg
  • 2 tbsp Worcestershire sauce or soy sauce
  • 1 tbsp mustard dijon

Meatloaf Glaze:

  • 1/2 cup bbq sauce + 1 tsp dijon mustard for topping


How to Make Meatloaf Muffins:

  • Spray a standard muffin tin with cooking spray and preheat oven to 400 degrees F.
  • Combine all the ingredients except for the bbq topping mixture. Scoop beef mixture into each muffin cup and top with about 1 heaping tsp full of bbq sauce mixture.
  • Bake for 25 min or until done. Allow to cool for 5 minutes then remove.
