This Russian carrot salad (also known as Korean Russian salad) is succulent, flavorful and perfectly seasoned! Shredded carrots are tossed in a delicious coriander vinaigrette creating a staple Russian Carrot Salad to have anytime of the year!
2lbscarrots(about 8 or 9 carrots peeled and washed)
3TBSPdistilled white vinegar
9little cloves of garliccrushed (or 5 large cloves)
1tspground black pepper
1/4cupof oilvegetable, canola or soybean oil is preferred
In a large bowl, julienne carrots using a mandoline slicer.
Add all the remaining ingredients, EXCEPT for the oil and toss everything together.
In a small saucepan heat the oil over high heat until oil gets smokey (about 5 minutes.)
Pour over carrots and toss to coat. Serve immediately or marinade in the fridge before serving.
