Oatmeal Creme Pies (Little Debbie Copycat)

Sweet oatmeal cookies are sandwiched between an easy "Marshmallow fluff" frosting to recreate the dessert known as Little Debbie Creme Pies.

Ingredients

  • COOKIES:
  • 2 cups brown sugar
  • 3/4 cup shortening
  • 2 eggs
  • 1/2 tsp salt
  • 3/4 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda dissolved in 3 Tbsp boiling water
  • 2 1/2 cups flour
  • 2 cups oatmeal
  • FILLING:
  • 1 16 oz tub of Marshmallow Fluff
  • 1 1/2 sticks 12 tbsp unsalted butter, softened
  • 1/2 cup powdered sugar

Instructions

  • Make the filling by beating the fluff and butter then add the sugar and mix until combined. Refrigerate.
  • Cream sugar and shortening. Beat in eggs.
  • Combine dry ingredients (salt, cinnamon, leavening, flour and oatmeal.)
  • Add the dry ingredients alternately with the soda mixture to the shortening and mix.
  • Scoop batter onto greased cookie sheets and bake at 350 F for 8-10 minutes. Cool.
  • Sandwich one heaping teaspoon of filling onto each pair of cookies.
