Oatmeal Creme Pies (Little Debbie Copycat)
Sweet oatmeal cookies are sandwiched between an easy "Marshmallow fluff" frosting to recreate the dessert known as Little Debbie Creme Pies.
2 cups brown sugar
3/4 cup shortening
1/2 tsp salt
3/4 tsp cinnamon
1 tsp baking powder
1 tsp baking soda dissolved in 3 Tbsp boiling water
2 1/2 cups flour
2 cups oatmeal
1 16 oz tub of Marshmallow Fluff
1 1/2 sticks 12 tbsp unsalted butter, softened
1/2 cup powdered sugar
Make the filling by beating the fluff and butter then add the sugar and mix until combined. Refrigerate.
Cream sugar and shortening. Beat in eggs.
Combine dry ingredients (salt, cinnamon, leavening, flour and oatmeal.)
Add the dry ingredients alternately with the soda mixture to the shortening and mix.
Scoop batter onto greased cookie sheets and bake at 350 F for 8-10 minutes. Cool.
Sandwich one heaping teaspoon of filling onto each pair of cookies.
