Bacon Potato Salad (Bacon Olivye)

This creamy Bacon Potato Salad is the bacon version to the the classic Ukrainian Olivye Salad! It has the perfect blend of eggs, bacon, corn and bell peppers and is smothered in mayo then topped with dill.


Bacon Potato Salad

  • 2 potatoes
  • 7 eggs
  • 1 carrot
  • 7 cooked bacon strips
  • 1 red bell pepper
  • 15 oz corn
  • 1 onion
  • 1 clove garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp fresh dill
  • 1 cup mayo


How to make Bacon Potato Salad:

  • In a medium saucepan, bring the potatoes, eggs and carrot to a boil. Boil 7 minutes then remove the eggs only and place into cold water. Continue boiling the carrot and potatoes until tender.
  • Meanwhile in a large bowl chop and combine the remaining ingredients. Once the carrot, eggs and potatoes are cool enough to handle; chop and add them in.
  • Mix together and serve.
