Chocolate Banana Bread

- 3 bananas ripened
- 1/2 cup canola oil
- 1 cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup semi-sweet chocolate chips
Preheat oven to 350° F. Line a loaf pan with parchment paper and set aside.
In a large bowl mash bananas. Whisk in the oil, sugar, eggs, and vanilla until well combined.
Whisk in the dry ingredients.
Fold in 3/4 cup of the chocolate chips and pour batter into a 9 by 5-inch loaf pan. Sprinkle with remaining 1/4 cup of chocolate chips.
Bake in the preheated oven for 50 minutes. Remove and allow to cool completely in the pan.
