Ingredients

  • 3 bananas ripened
  • 1/2 cup canola oil
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 350° F. Line a loaf pan with parchment paper and set aside. 
  • In a large bowl mash bananas. Whisk in the oil, sugar, eggs, and vanilla until well combined.
  • Whisk in the dry ingredients.
  • Fold in 3/4 cup of the chocolate chips and pour batter into a 9 by 5-inch loaf pan. Sprinkle with remaining 1/4 cup of chocolate chips. 
  • Bake in the preheated oven for 50 minutes. Remove and allow to cool completely in the pan.
