Ingredients
Shrimp Couscous Salad
1cupcouscous
1cupwater
1/2red bell pepper, diced
1/2yellow bell pepper, diced
12ozshrimp, cooked
1roma tomato, diced
1/2cupfeta cheese, crumbled
Vinaigrette Dressing:
1/3cupolive oil
2tbspapple cider vinegar
1tspdijon mustard
1clovegarlic, crushed
1/2lemon, juiced
salt & pepper to taste
Instructions
How to make Shrimp Couscous Salad with feta and vinaigrette:
Bring water to a boil and stir in couscous. Cover and remove from heat. Let sit 5 minutes then fluff with a fork. Cool.
Whisk dressing ingredients and set aside.
Toss together the remaining ingredients and pour in the dressing. Toss to coat and keep refrigerated.
