These Cheesy Beef Enchiladas are amazing! Soft flour tortillas are stuffed with a cheesy beef and bean mixture, then smothered in a homemade enchilada sauce! An easy enchilada recipe that won raves!
Cheesy Beef Enchiladas:
2(15 oz)cans pinto beansmashed
1cupTostitos Salsa Con Queso cheese dip(divided)
10Large Burrito-Size flour tortillas8-inch
1cuptomato juice(any canned tomatoes)
How to make Beef Enchiladas:
Fry the beef and onion until browned. Add the seasoning, beans, 1/2 cup of cheese dip, salt and pepper. Set aside.
TO MAKE THE ENCHILADA SAUCE: Melt margarine, whisk in flour. Add milk, tomato juice and water-bring to a boil. Then add cheese dip, sour cream, chili powder, salt and pepper. Stir until smooth. Pour a little bit of sauce on the bottom of a baking pan. Place meat mixture on tortillas, roll up and place side-by-side in baking pan.
Pour sauce on top. Cover with foil and bake at 350°F for 45 minutes or until hot. Serve with Pico de gallo or sour cream.
Notes: If using a high fat content beef like 70/30; drain your fat before adding the onion.
Puree any canned tomatoes that you have in your pantry for the tomato juice or puree 3 fresh tomatoes.
Can use Cheese Whiz or any type of jarred cheese sauce.
Use 4 cups of cooked beans with their liquid instead of canned. Black or pink beans can be used.
