Ingredients for Chicken Curry:
2lbschicken breasts (2 breasts, cubed)
4carrotsdiced
1oniondiced
1/2cupsalsa
13.5ozcoconut milk
6oztomato paste
1TbspCurry powder
1 1/2tspsalt
1tspred pepper flakes
Instructions
How to make Easy Chicken Curry:
Place the cubed chicken, onion and carrots into a lightly greased crockpot. Whisk together the remaining ingredients and pour over the chicken.
Stir to coat and cook over High for 4 hours. Serve over White rice and a side of Naan Bread! Delicious!
Notes
Stovetop Instructions: Sauté the onion, carrots and chicken in a kettle, first. Then add the spices and sauce. Simmer for 15-20 minutes over med-low partially covered.Notes: If not in favor of any heat, omit or reduce the pepper flakes to 1/4 tsp.
This chicken curry does not need additional liquid and it will thicken nicely without a slurry.
