Instructions
How to make Manhattan Bagel Breakfast Sandwiches:
Pre-heat a non-stick skillet over medium-high heat (3-4 minutes.) Add the oil and swirl. Crack the eggs in and reduce heat to medium-low. Break the yolk and season with salt and pepper.
Once the eggs start to set (1-2 minutes) flip and continue to cook for another minute. Turn off the stove and top with American Cheese. Let sit on hot warmer until cheese melts.
Meanwhile, toast the bagels. Place the eggs onto the bottoms of the bagels. Top with a slice of tomato, a few onion pieces, and the other half of the bagel. Enjoy!
Notes
BlackPepper: sprinkle a generous amount! Toasting bagels: I toasted Lender's Bagels whole and split open before assembling for softer insides. You can toast bagel halves instead. Tomato and Onion Topping: My sister used to order the egg, tomato, and onion breakfast bagel from Manhattan Bagels. I could not find it on their Breakfast menu, perhaps it's a discontinued menu item.
