Mix the first 5 ingredients until fluffy. In a separate bowl stir the dry ingredients together and gradually mix into the sugar mixture. Fold in the sprinkles and chocolate chips and freeze dough for up-to 1 hour for easy handling.
Preheat oven to 375°. Scoop 1″ balls onto a baking sheet. Lightly push tops down, placing dough 2 inches apart. Bake for 13-15 minutes or until edges look lightly browned and centers are very soft.
Lightly push down tops using an oven mitten to crack tops and insert 2-3 white chocolate chips over the tops for an extra garnish. (This is optional.)
