These Chewy Peanut Butter Cookies are loaded with peanut butter flavor and peanut chunks! They taste like the Subway Peanut Butter Cookies and are super easy to make! Wait until you try these tender melt in your mouth deliciousness!
Peanut Butter Cookie Dough:
4ozbutter (1 stick)
How to make Chewy Peanut Butter Cookies:
Cream the shortening, butters, and sugars for 2 minutes until pale and fluffy.
Mix in the eggs then the dry ingredients. Beat well. Fold in the nuts.
Scoop cookie dough using a 1 1/2" scoop. Place cookies on to a cookie sheet 2 inches apart.
Bake 11 minutes at 375°F.
Notes: This recipe makes 27 large cookies. I used a 1 1/2-inch scoop but you can use a 1/4 measuring cup instead.
To freeze Cookies: scoop onto a tray and flash freeze. Once solid, transfer frozen cookie dough balls into a freezer bag and freeze up to 3 months.
For Refrigerator Cookies: use margarine instead of the butter and place whipped cookie dough batter into a large container and keep refrigerated for up to 1 week. Scoop and bake as needed. Note: margarine won't solidify like butter making it easier to scoop.
