Super Moist Banana Chocolate Chunk Muffins
Search for Banana Chocolate Chip Muffins recipe no more! These healthy banana muffins are so airy, light and fluffy and who would have guessed mayonnaise would be a part of the ingredient list!
4 oz semi-sweet square bars, cut into chunks
overly ripe bananas
Heat oven 375 degrees F. Line 18 muffin cups with baking cup paper.
In a large bowl whisk together the flour, sugars, baking powder, and baking soda.
In a separate bowl mash bananas until mushy and wet; add the mayonnaise and whisk well. Then add to dry ingredients and stir everything together until the flour is fully incorporated.
Fold in 1 cup of the semi-sweet chocolate chunks into the batter (reserving 1/3 cup for the tops.)
Fill each lined muffin cup about 3/4 full using a 1/4 cup measuring scoop. Then Garnish each muffin cup with an additional few pieces of the chocolate chunks.
Bake for 20-25 minutes or until done.
