In a non-stick skillet, sauté the garlic in 1 tbsp of oil. Add the spinach and cook over medium heat until spinach leaves wilt.
Stir in the cream cheese and melt. Add in the remaining ingredients.
Heat thoroughly until bubbly and smooth.
Serve or broil with additional cheese for a Restaraunt-style dip!
Notes
Frozen Spinach: to use frozen spinach, squeeze excess liquid out and simply add after the cream cheese melts to retain a green color. Note: Over heating the spinach or cooking too long can make the green spinach color dull.To make ahead: make and cool dip. Broil over low heat with additional cheese before serving. To freeze: Cool and store dip in a freezer bag for up-to 3 months. Reheat thawed dip in the oven, stovetop or microwave until hot.
