This Monterey Chicken isn't on the Chili's menu anymore, but you can still make one of the easiest and tastiest bbq chicken recipes out there! Seared chicken breasts are smothered in bbq sauce and gooey cheese with crisp bacon to make the ultimate bbq chicken dinner and it tastes like a restaurant dish!
Season the chicken breasts with salt, pepper and paprika on both sides. Set aside.
Heat an oven safe skillet over high heat. Sear each side of chicken in 1 Tbsp of oil for 2-3 min on each side.
Spoon 1 heading tbsp of bbq sauce and 2 heaping tbsp of grated cheese over each chicken breast. Top with bacon crumbs.
Place into the oven and broil until cheese melts (up-to 5 min over low broil.)
Garnish with diced tomatoes and scallions, if desired. (Still good without it.)
NOTE: Can use different kinds of grated cheeses. This bbq chicken is still good without scallions or tomatoes. TO MAKE AHEAD: Season and sear chicken breasts as directed. Spoon a thin layer of bbq sauce over the bottom of a baking dish. Spoon bbq sauce and grated cheese over the top of the chicken breasts and top with bacon crumbs. Keep refrigerated until needed. Bake in a pre-heated 400° F oven for 20-25 min. Garnish with tomatoes and scallions.
