A tried and passed down Zuppa Toscana Soup recipe that my brother-in-law shared when he worked at Olive Garden years ago. This is the EASIEST Zuppa Toscana soup because it’s all done in one-pot! 

This is by far my ultimate favorite way to make Zuppa Toscana soup. This copycat Olive Garden version was altered by my mother-in-law to make a lesser proportion since the original recipe was for a big batch. I highly recommend this recipe to anyone who likes Olive Gardens soup. A total must try recipe if you haven’t made this version yet!

Ingredients for Zuppa Toscana:

  • 12 cups water
  • 6 Golden potatoes, skins on & washed well
  • 2 1/2 mild sausages, casings removed
  • 6 slices of ham (you can sub ham off the bone or canadian bacon)
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 packet of chicken bullion
  • 1 tsp salt
  • dash of cayenne pepper
  • 1 1/4 cup heavy cream
  • 8 oz chopped kale (about 1 bunch, stems removed)

(Note: you can substitute chicken broth for the water and packet of bullion.)

Ingredients

Zuppa Toscana:

  • 12 cups water
  • 6 Golden potatoes skins on & washed well
  • 2 1/2 mild sausages casings removed
  • 6 slices of ham (diced) can sub Canadian bacon or bacon bits
  • 1 onion diced
  • 2 cloves of garlic minced
  • 1 tsp chicken bullion powder
  • 1 tbsp salt
  • 1/2 tsp dash of cayenne pepper
  • 1 1/4 cup heavy cream
  • 8 oz chopped kale about 1 bunch, stems removed

Instructions

How to make EASY Zuppa Toscana:

  • In a large pot, saute the onion, sausage, ham and garlic for 7 minutes or until tender.
  • Add the water, salt and chicken bullion powder: bring to a boil. Add the potatoes and simmer 25 minutes.
  • Add the cream, kale and cayenne pepper. Bring to a boil and turn soup off.
  • Garnish soup with freshly gated parmesan cheese before serving!

Notes

Italian Sausage Substitute: 
Can use seasoned ground beef in place of the Italian Sausages. 
NOTE: Ham works as bacon. Either one will work. Canadian Bacon is best! 
Chicken Bullion Powder: Can omit bullion powder and use Chicken broth instead.

    How big are your packets of bullion? I’m using chicken base so would like to keep the same amount. One t. Of base is for 1 cup of water. How many should I use?

      If you’re using the better than bouillon chicken base you can just use a heaping teaspoon of that instead when bringing water to a boil.
