A tried and passed down Zuppa Toscana Soup recipe that my brother-in-law shared when he worked at Olive Garden years ago. This is the EASIEST Zuppa Toscana soup because it’s all done in one-pot!
This is by far my ultimate favorite way to make Zuppa Toscana soup. I highly recommend this recipe to anyone who likes Olive Gardens soup. A total must try recipe if you haven’t made this version yet!

Ingredients for Zuppa Toscana:
- 12 cups water
- 6 Golden potatoes, skins on & washed well
- 2 1/2 mild sausages, casings removed
- 6 slices of ham (you can sub ham off the bone or Canadian bacon)
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 packet of chicken bullion
- 1 tsp salt
- dash of cayenne pepper
- 1 1/4 cup heavy cream
- 8 oz chopped kale (about 1 bunch, stems removed)
(Note: you can substitute chicken broth for the water and packet of bullion.)

Zuppa Toscana:
- 12 cups water
- 6 Golden potatoes skins on & washed well
- 2 1/2 mild sausages casings removed
- 6 slices of ham (diced) can sub Canadian bacon or bacon bits
- 1 onion diced
- 2 cloves of garlic minced
- 1 tsp chicken bullion powder
- 1 tbsp salt
- 1/2 tsp dash of cayenne pepper
- 1 1/4 cup heavy cream
- 8 oz chopped kale about 1 bunch, stems removed
Instructions
How to make EASY Zuppa Toscana:
- In a large pot, saute the onion, sausage, ham, and garlic for 7 minutes or until tender.
- Add the water, salt, and chicken bullion powder: bring to a boil. Add the potatoes and simmer 25 minutes.
- Add the cream, kale, and cayenne pepper. Bring to a boil and turn soup off.
- Garnish soup with freshly grated parmesan cheese before serving!
