This creamy spinach rice makes the perfect side dish using fresh spinach! A three cheese melody, cream and broth make it extra creamy and it's all cooked in one-pot!
Saute rice in oil for 2 minutes. Add the broth, heavy cream, cream cheese, spices and bring to a boil. Simmer for 10 minutes.
Stir in the spinach, parmesan cheese and simmer for 10 more minutes.
Stir in the Monterey Jack cheese and serve.
Notes
NOTE: Can add fresh garlic or garlic powder with the spices for extra flavor. CHEESE: Can use any kind of white grated cheese for the Monterey Jack cheese. I used a pre-packaged blend of grated Colby and Monterey. CHICKEN BROTH SUBSTITUTE: Stir together water and 1 teaspoon of salt or chicken bullion powder.
