This creamy spinach rice makes the perfect side dish using fresh spinach! A three cheese melody, cream and broth make it extra creamy and it’s all cooked in one-pot!

When you have lots of spinach you want tasty ways to use it up. Of coarse you can make a creamy spinach dip or our popular creamy spinach chicken bake, but sometimes something like a side dish is preferred to compliment the main dish. Not a fan of spinach add some broccoli or chicken pieces! The cream, parmesan, Monterey Jack and cream cheese make this rice dish extra creamy! And what better way to make dinner than in one pot?!

What makes this spinach rice creamy?

The heavy cream, parmesan, Monterey Jack and cream cheese all make for a creamy rice dish. And it’s all made in one pot to cut down on dishes!

This creamy spinach rice makes the perfect side dish using fresh spinach! A three cheese melody, cream and broth make it extra creamy and it's all cooked in one-pot!

Ingredients

Creamy Spinach Rice

  • 2 cups Jasmine Rice
  • 3 Tbsp Canola oil
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1/4 tsp salt & pepper
  • 8 oz fresh spinach coarsely chopped
  • 1 cup parmesan cheese grated
  • 1 cup Monterey Jack Cheese grated

Instructions

How to make creamy Spinach Rice

  • Saute rice in oil for 2 minutes. Add the broth, heavy cream, cream cheese, spices and bring to a boil. Simmer for 10 minutes.
  • Stir in the spinach, parmesan cheese and simmer for 10 more minutes.
  • Stir in the Monterey Jack cheese and serve.

Notes

NOTE: Can add fresh garlic or garlic powder with the spices for extra flavor. 
CHEESE: Can use any kind of white grated cheese for the Monterey Jack cheese. I used a pre-packaged blend of grated Colby and Monterey. 
CHICKEN BROTH SUBSTITUTE: Stir together water and 1 teaspoon of salt or chicken bullion powder.

    This dish is so good! Have made it several times using cheddar here in Australia as we don’t have Monterey Jack cheese. Great on its own or as a substantial side!

    Do you use cooked rice or raw rice?

      I would use parboiled rice or partially cooked rice for it to absorb more liquid during the cooking.
