Baked Chicken Fritters:
3lbschicken breast or thighs, diced
2eggs
1onion, finely grated
1/4cupmayo
1tspsalt
1/4tspground black pepper
1cupchicken stuffing
2/3cuphot water
4cupscornflakes cereal, crushed
Instructions
How to make Baked Chicken Fritters:
Combine the stuffing mix and hot water; allow to sit for 10 minutes for the crumbs to soak up the water.
Stir in the remaining ingredients except for the cornflake crumbs.
Scoop chicken mixture onto crumbs and form into patties.
Place onto greased baking sheets. Spray the tops with cooking spray and bake in a preheated 450 degree F oven for 15-20 minutes.
