2chicken breasts, (cubed)
3potatoes, (peeled and cubed)
1Tbspsalt
3cupssorrel leaves, (chopped)
2hardboiled eggs, (chopped)
1tspgarlic salt
1tsplemon pepper
3 bay leaves
1/3cupsour cream
Instructions
How To Make Sorrel Soup:
Fry the chicken and onion in 2 Tbsp of oil for 5 minutes.
Meanwhile, bring 14 cups of water to a boil. Add the potatoes, sauteed chicken, and salt, and simmer for 20 minutes.
Stir in the Sorrel, chopped eggs, and remaining seasonings; bring to a boil and simmer for 5 minutes. Whisk in the sour cream and ladle into bowls. Enjoy!
Notes
Sorrel Substitute: use spinach and the juice of 1 lemon for sorrel leaves.
Instant Pot Instructions: Cook the chicken and onion on saute mode. Add everything except the sorrel and sour cream. Pressure cook on high for 15 minutes. Add the sorrel and sour cream then cook on high for another 2 minutes.
