10 or 12-inch cast-iron pan
Ingredients
1 1/2lbslarge raw shrimp, (thawed and patted dry)
1 Tbsp unsalted butter
1Tbsp olive oil
3cupsmozzarella cheese
6large flour tortillas
Seasoning:
5clovesgarlic, (crushed)
1/4tspgarlic salt
1/4tspseasoning salt
1/2tspcreole seasoning
1/2tspold bay seasoning
Instructions
Preheat a cast-iron skillet with butter and olive oil over medium heat.
Season the shrimp evenly on both sides. Fry on each side until shrimp turns pink (2 minutes.)
Remove the shrimp and place the skillet back on the stove. Add an additional 2 tbsp of grease and reduce the temperature to low heat.
To Assemble Quesadillas: coarsely chop the cooked shrimp. Place 1/2 cup of mozzarella and 1/2 cup the shrimp evenly over a large tortilla. Fold in half and toast on each side until the cheese melts.
Notes
Note: Add an additional 2 Tbsp of grease between every quesadilla when toasting.
