Boiled Baby Potatoes are smothered in a buttery bacon and onion sauce for one tasty side dish! Ingredients
5lbsYukon gold potatoes
12ozbacon, (or salted cured pork)
1onion, (diced)
4ozunsalted butter, (1 stick)
1 1/2tspgarlic salt
1/2tsplemon pepper
1/4tspsalt
Instructions
Place potatoes into a large pot and fill half way with water. Bring to a boil and cook the potatoes until fork tender (10-20 minutes.)
Meanwhile, cut the bacon into strips. Sauté the pork and onion in a large skillet with 1 Tbsp of butter over medium heat until browned (5-8 minutes.) Turn off the heat and add the remaining butter to melt. Set aside.
Once the potatoes are tender; drain and add the bacon butter sauce with spices. Toss everything together to coat.
Garnish with fresh dill and green onions. Serve with a side of sour cream. This dish keeps well ahead of time. Keep on low in pot or crock pot until serving.
Notes
Potatoes: Use small Yukon Gold potatoes or young baby potatoes. Creamer baby potatoes will take up-to 10 minutes to boil. If, using bigger golden potatoes, cut in half before boiling.
Skins: can be scraped off young potatoes or peeled off. Creamer baby potatoes don't need to be peeled. Trim potatoes where needed when leaving skins on and wash well.
Pork: use bacon or any cured pork or ham.
