My husband’s mom would serve these potatoes hot for Sunday’s lunch after church. She would boil them whole and toss them in the onion and bacon butter sauce then keep it warm in a slow cooker during church. When our families would sit around the table these potatoes were served with a side of sour cream and it was one of my favorite Sunday Dinners!
She would use a slab of cured salt pork or store bacon slices (chopped.) I personally love the cured pork because it’s much chewier and thicker. If you’re not a pork fan skip the meat and make this vegetable dish with just melted butter and fresh herbs!
This comfort dish is one of my top potato recipes! It’s so easy to throw small potatoes into a pot of boiling water and make a butter bacon sauce while the potatoes cook. The combination is a keeper and you only need a few ingredients to pull this together!

What Kind of Potatoes Should I Use?
Yukon Gold Baby Potatoes are the best for this dish. If you pick them up in the grocery store, pick the smaller ones out of the bag. The smaller potatoes, the better. When using young potatoes from the Farmer’s Market or garden, the skins can be scraped off easily since they’re fresh from the ground. Once the potatoes stay in storage for some time the skin gets harder.
I typically peel off the skins from store potatoes. However, if you buy the medley bag of fresh creamer potatoes you can keep the skins on. Ideally, you want the skins if the potatoes are fresh or young. Older potatoes should be peeled.
You can use any red-skinned or yellow-skinned varieties as long as they are small baby potatoes. Large Russet or chef potatoes can be starchy and fall apart after boiling. Grocery stores carry a variety of creamer baby potatoes that can be cooked in as quick as 6 minutes!
Red, purple, or yellow creamers are usually a variety of Idaho, Dutch Yellow, Ruby Gold, Russian Banana, Purple Peruvian, French Fingerling, or Ruby Crescent Potatoes.

This recipe can be served right after boiling. However, if you’re hosting a crowd, it works both ways! To make baby potatoes ahead of time simply boil the potatoes until fork-tender. Gently toss the butter bacon sauce with potatoes and transfer into a slow cooker. Keep warm for up to 2 hours.
This also works great kept warm on the stovetop until guests come an hour in advance. Keep it over the lowest setting. It makes a great carry-in dish for potlucks or guests.

- Parboil the potatoes by boiling the potatoes halfway done (7 minutes.) Slice bigger potatoes in half before boiling.

Boiled Baby Potatoes with Butter Bacon Sauce
Equipment
- 6-quart pot
- 12-inch frying pan
Ingredients
- 5 lbs Yukon gold potatoes
- 12 oz bacon (or salted cured pork)
- 1 onion (diced)
- 4 oz unsalted butter (1 stick)
- 1 1/2 tsp garlic salt
- 1/2 tsp lemon pepper

- Place potatoes into a large pot and fill half way with water. Bring to a boil and cook the potatoes until fork tender (10-20 minutes.)
