Ingredients
Peanut Butter Cookie Dough:
1cuppeanut butter
4ozbutter , (1 stick)
1/2cupshortening
1cupbrown sugar
3/4cupgranulated sugar
2eggs
2cupsflour
2tspbaking soda
1tspsalt
1/4cupchopped peanuts, (optional)
Instructions
How to make Chewy Peanut Butter Cookies:
Cream the shortening, butters, and sugars for 2 minutes until pale and fluffy.
Mix in the eggs and then the dry ingredients. Beat well. Fold in the nuts.
Scoop cookie dough using a 1 1/2" scoop. Place cookies onto a cookie sheet 2 inches apart.
Bake for 11 minutes at 375°F.
Notes
Notes: This recipe makes 27 large cookies. I used a size 40 cookie scoop but you can use a 1/4 measuring cup instead.
To freeze Cookies: scoop onto a tray and flash freeze. Once solid, transfer frozen cookie dough balls into a freezer bag and freeze for up to 3 months.
For Refrigerator Cookies: use margarine instead of butter and place whipped cookie dough batter into a large container and keep refrigerated for up to 1 week. Scoop and bake as needed. Note: margarine won't solidify like butter making it easier to scoop.
