3lbsGolden Potatoes, (about 9, cubed)
10ozsliced white mushrooms
1diced onion
1chicken breast, (cubed)
8ozMonterey Jack Cheese, shredded
3Tbspmayonnaise
2tspgarlic salt
1/2tspground black pepper
Instructions
How to make Loaded Baked Potatoes:
In an oven-safe pot, saute the onion, mushrooms, and chicken in 4 Tbsp of oil until browned (10 minutes.) Set aside.
Meanwhile in a separate skillet sear the potatoes over medium-high heat in 3 Tbsp oil, until potatoes release a little sweat (about 15 minutes).
Add to the mushroom mixture and combine all the remaining ingredients. Toss to coat. Cover and bake at 350°F for 30 minutes.
