Pan-frying potatoes before they get baked in the oven gives them a head start to cooking and gives the loaded potatoes their signature charred look! My brother-in-law rated this recipe 10 out of 10 and even commented that he’d have this as a side if he ever ate out with a girlfriend! Besides, it’s fun to switch up your potato game from time to time because we all like to try new recipes once in a while!

This recipe was shared by our friends who live in South Carolina. Liliya’s husband helps with the ministry of a large Slavic church down South, so you can imagine all the guests she has hosted, including our family multiple times. She always has tasty food and loves to share her favorites! This mushroom potato bake was one of the recipes we had at her house! The only thing I omitted was the use of Old bay and Goya adobo seasoning which she added. I wanted to implement staple spices for anyone that may not have those on hand, but if you do, use them to taste.

Ingredients
Loaded Baked Potato Casserole:
- 3 lbs Golden Potatoes (about 9, cubed)
- 10 oz sliced white mushrooms
- 1 diced onion
- 1 chicken breast (cubed)
- 8 oz Monterey Jack Cheese shredded
- 3 Tbsp mayonnaise
- 2 tsp garlic salt
- 1/2 tsp ground black pepper
Instructions
How to make Loaded Baked Potatoes:
- In an oven-safe pot, saute the onion, mushrooms, and chicken in 4 Tbsp of oil until browned (10 minutes.) Set aside.
- Meanwhile in a separate skillet sear the potatoes over medium-high heat in 3 Tbsp oil, until potatoes release a little sweat (about 15 minutes).
- Add to the mushroom mixture and combine all the remaining ingredients. Toss to coat. Cover and bake at 350°F for 30 minutes.
