Loaded Baked Potatoes
Potato Casseroles are great ways to feed crowds, even something as simple as a side of potatoes or a bowl of loaded baked Potato Soup can be a super hearty way to feed a family! Pan-frying potatoes before they get baked in the oven gives them a head start to cooking and gives the loaded potatoes their signature charred look! My brother-in-law rated this recipe 10 out of 10 and even commented that he’d have this as a side if he ever ate out with a girlfriend! Besides, it’s fun to switch up your potato game from time to time because we all like to try new recipes once in a while!
Loaded Chicken and Potato Casserole with Mushrooms
These Loaded Baked Potatoes are definitely a game-changer to the common recipes you’d see with cheddar and bacon chunks! Since chicken is being used in place of the bacon and plump mushrooms get added to the scene, loaded baked potatoes get taken up a whole other notch!
This recipe was shared by our friends who live in South Carolina. Liliya’s husband helps with the ministry of a large Slavic church down South, so you can imagine all the guests she has hosted, including our family multiple times. She always has tasty food and loves to share her favorites! This mushroom potato bake was one of the recipes we had at her house! The only thing I omitted was the use of Old bay and Goya adobo seasoning which she added. I wanted to implement staple spices for anyone that may not have those on hand, but if you do, use them to taste.

What is a loaded baked potato casserole?
A loaded baked potato casserole is a potato dish that is typically enriched with other ingredients such as, bacon, cheese, and sometimes sour cream. The potatoes are combined with multiple toppings and seasonings then baked to doneness.
In this loaded baked potato casserole, mushrooms and chicken are used to give another potato concoction.
What goes with loaded baked potatoes?
Loaded baked potatoes are already hearty, so a light side or a crusty bread would pair wonderfully! Here is a list of recipes that would pair nicely;
What toppings can be baked with potatoes?
Potatoes can be dressed up in so many different ways! It’s really a matter of preference and what you have on hand. Bacon, cheddar cheese, sour cream, and scallions make for the classic version of loaded potatoes, but different veggies and even canned condiments can be used.
A good rule of thumb to choosing what toppings would go best is to evaluate if you like the ingredients by themselves and would they go with potatoes? Don’t be shy to try new toppings, you never know if that soy sauce sitting in your pantry would make a good potato dish!
Do you sear loaded potatoes?
Yes! Searing potatoes not only enhance the appearance of cubed potatoes but it also impacts the texture. It also helps partially cook the potatoes, giving it a head start to baking them in the oven.
Do you peel the skins on potatoes?
The skins on potatoes are actually of nutrient value so if you’re all about eating healthy, leave them on! Plus, it’ll make things easier for you because you won’t have to peel potatoes!
Can I make it in the skillet?
A loaded potato casserole can be finished off in the skillet rather than finishing off in the oven. However, a lid is recommended for properly cooking and steaming the potatoes. Also, a lid will help the cheese melt smoothly.
What seasonings go best?
The best seasoning to potatoes is salt and pepper! However, spices like dried garlic and onion or even herbs can enhance the flavor of potatoes. Liliya (the one who shared this recipe) used Old bay seasoning and Goya adobo seasoning to flavor her potatoes, but not everyone can have the same spice mixes in their pantry. Which is why I choose staple spices that most are likely to have sitting around. Paprika also tends to give a pretty orange hue and is used for these baked potato wedges.

- Add bacon and omit the chicken.
- For richer potatoes add a splash a cream.
- Go with a cheese that melts nicely. Try to avoid stringy cheese like Mozzarella.
