This zesty and marinated mushroom salad is a staple at Ukrainian gatherings! It's such a simple recipe: boil whole button mushrooms, toss in Italian dressing, and add fresh herbs. Let it marinate and serve cold. This mushroom salad is quite addictive and so delicious!
1/2cupItalian Dressing, (or any zesty and bold kind)
Instructions
Bring a large 6-quart pot of water (a little more than halfway full) to a boil. When the water has come to a boil, add 2 pinches of salt, 1 tbsp of vinegar, and the whole mushrooms.
Boil for 10 minutes from the time you throw them in the water.
Drain in a colander and cool completely before adding any other ingredients.
When the mushrooms have cooled, add 1/2 cup of Italian dressing, 3 tbsp chopped green onions, and 4 cloves crushed garlic; toss until well combined.
Refrigerate at least 6 hours before serving or overnight. Serve salad cold.
Notes
This salad gets better in flavor after sitting in the fridge.
Feel free to garnish with freshly chopped parsley instead. You can also add 1 sweet bell pepper (finely chopped) for more flavor and crunch.
