Meatloaf muffins:
1lbground pork, or any meat
1/3 cucumber, english/ grated
1bell pepper, Orange / grated
1 onion, small/ grated
1/2cupcouscous, uncooked
1egg
2tbspWorcestershire sauce , or soy sauce
1tbsp mustard, dijon
Meatloaf Glaze:
1/2cupbbq sauce , + 1 tsp dijon mustard for topping
Instructions
How to Make Meatloaf Muffins:
Spray a standard muffin tin with cooking spray and preheat oven to 400 degrees F.
Combine all the ingredients except for the bbq topping mixture. Scoop beef mixture into each muffin cup and top with about 1 heaping tsp full of bbq sauce mixture.
Bake for 25 min or until done. Allow to cool for 5 minutes then remove.
