These Meatloaf Muffins have couscous and you can’t even tell! They are healthy without compromising on the classic meatloaf flavor! 

Meatloaf muffins are easy to make, which means dinner can served in as quick as 30 minutes! This is a great way to use up veggies and grains. The couscous fluffs up and you won’t even tell there’s grains in here! We also have an Oatmeal Meatloaf recipe for a gluten-free alternative but without missing out on the classic flavors! Feel good about eating these Meatloaf muffins!

Ingredients for Meatloaf Muffins:

  • 1 lb ground pork (or any)
  • 1/3 of an english cucumber, grated
  • 1 orange bell pepper, grated
  • 1 small onion, grated
  • 1/2 cup uncooked couscous
  • 1 egg
  • 2 tbsp Worcestershire sauce or soy sauce
  • 1 tbsp dijon mustard
  • 1/2 cup bbq sauce + 1 tsp dijon mustard (for topping)

How to make Healthy Meatloaf Cupcakes:

1. Spray a standard muffin tin with cooking spray and preheat oven to 400 degrees F.

2. Combine all the ingredients except for the bbq topping mixture. Scoop beef mixture into each muffin cup and top with about 1 heaping tsp full of bbq sauce mixture.

3. Bake for 25 min or until done. Allow to cool for 5 minutes then remove.

  • 1 bell pepper Orange / grated
  • 1 onion small/ grated
  • 1/2 cup couscous uncooked
  • 1 egg
  • 2 tbsp Worcestershire sauce or soy sauce
  • 1 tbsp mustard dijon

Meatloaf Glaze:

  • 1/2 cup bbq sauce + 1 tsp dijon mustard for topping

    Thanks for another great recipe. Quick question, did you use any salt or black pepper or any other spices in your mixture?
    Do you think that it was taste good with ground chicken as well?

      Thank you Natasha, that’s wonderful to know:) Yes, ground chicken should probably work. I think any preferred ground meat should work for these muffin cups. These are really good the way they are without the extra seasoning, as the bbq mixture gives these a boost of flavor and perhaps the veggies contribute to some flavor, but if you want you can season these to taste. Also if using Worcestershire or soy sauce, these liquids are already seasoned so be easy on the salt level when using.
