Ingredients
Southwest Egg Rolls:
15ozblack beans , (drained)
3cupsMexican Cheese
1 1/2lbscooked chicken breast, (or two 12.5 oz cans, drained)
In a large bowl mix all the ingredients together except for the tortillas.
Place a heaping 2 Tbsp of filling onto the bottom of each tortilla. Brush water around the edges and rollup.
Deep fry in oil until all sides are golden brown and cooked thoroughly.
Notes
uncooked tortillas* can be found in the fridge section of Walmart by the cheeses. Can use regular flour tortillas just omit brushing the edges with water and secure with a toothpick before frying.
Oven Directions: Spray each side of the rolls with cooking spray or brush with oil. Lay seam down onto a lined baking sheet and bake at 425°F for 20 minutes.
