1 set of skewers, (about five large stainless steel skewers)
Wash the chicken breasts under cold water and pat them dry with paper towels. Using a sharp knife, trim off any fat or tough tendons. Cut the chicken into uniform bite-sized pieces about 2 inches thick so they cook more evenly.
Make the grilled chicken marinade by combining all the marinade ingredients with the chicken. You can add the marinade ingredients directly on top of the chicken and mix them in using kitchen gloves or mix them separately in a bowl and then massage them into the chicken.
Marinade the chicken in the creamy marinade for at least 20 minutes.
Meanwhile, preheat the grill to medium-high heat (around 375-400°F).
Thread the chicken onto the skewers.
Cook grilled chicken kabobs for 3-5 minutes at medium-high heat or until the chicken reaches an internal temperature of 165°F.
Serve warm on skewers or remove off of the skewers onto a serving dish.
