I got this recipe from my cousin who is so creative and such an amazing cook (literally almost anything she makes tastes so good), thank you Luba! How to make Bacon Potato Salad:
Bacon Potato Salad (Bacon Olivye)
Ingredients
Bacon Potato Salad
- 2 potatoes
- 7 eggs
- 1 carrot
- 7 cooked bacon strips
- 1 red bell pepper
- 15 oz corn
- 1 onion
- 1 clove garlic
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp fresh dill
- 1 cup mayo
Instructions
How to make Bacon Potato Salad:
- In a medium saucepan, bring the potatoes, eggs and carrot to a boil. Boil 7 minutes then remove the eggs only and place into cold water. Continue boiling the carrot and potatoes until tender.
- Meanwhile in a large bowl chop and combine the remaining ingredients. Once the carrot, eggs and potatoes are cool enough to handle; chop and add them in. Mix together and serve.
