Bacon Potato Salad (Bacon Olivye)

This creamy bacon potato salad is so good! The perfect blend of eggs, bacon, corn and bell peppers that are smothered in a dill mayo! It’s the bacon version to the classic Ukrainian Olivye Salad!

I got this recipe from my cousin who is so creative and such an amazing cook (literally almost anything she makes tastes so good), thank you Luba! She had served this salad for dinner one time and I couldn’t resist to not ask how she made it. If you like to try new salads this one should be on the to-make list! I love how easy it is to throw together from common ingredients and how close it is to the classic Ukrainian Potato Salad but with bacon.

How to make Bacon Potato Salad:

  1. In a medium saucepan, bring the potatoes, eggs and carrot to a boil. Boil 7 minutes then remove the eggs only and place into cold water. Continue boiling the carrot and potatoes until tender.
  2. Meanwhile in a large bowl chop and combine the remaining ingredients. Once the carrot, eggs and potatoes are cool enough to handle; chop and add them in.
  3. Mix together and serve.

Bacon Potato Salad

  • 2 potatoes
  • 7 eggs
  • 1 carrot
  • 7 cooked bacon strips
  • 1 red bell pepper
  • 15 oz corn
  • 1 onion
  • 1 clove garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp fresh dill
  • 1 cup mayo
