It’s all done in one-pot and has so much flavor! My mother-in-law discovered this mushroom rice recipe in an old English cookbook and we have been making this tasty rice dish ever since. I was intimated by the amount of oil here but after proven trials of this dish that all disappeared. This has got to be one of the tastiest mushroom and rice combinations that I have tried! Ingredients Mushrooms Rice:1 (24oz) pkg Fresh Mushrooms, sliced3 carrots, chopped into chunks2 medium onions, diced3/4 cup olive oil2 cups jasmine rice uncooked & rinsed2 3/4 cups water1/2 tbsp salt1/2 tsp ground black pepper1 tbsp vegeta (all purpose seasoning)1 tsp paprika How to make Mushroom Rice:Heat olive oil in a shallow frying pan over medium-hi heat. Add the carrots, onions & sliced mushrooms and sauté until reduced in size and browned. (10-15 min.)2. Once vegetables have browned add the rice, seasonings, and water; stir to combine and bring to a boil; then cover and reduce heat to low. Simmer mixture for 25 minutes.3. Turn stove off and allow rice to steam a little (10 min.)
