NOTE: Use as much spinach as you can pack into your baking dish because spinach does shrink quite a bit.

1. First, pack spinach onto the bottom of a baking dish. Top with butter slices and layer the fish fillets over the top

2. Then, combine the sauce ingredients and evenly spread over the top of the casserole. Finally, sprinkle with cheese and bake in a preheated to 500 degrees F oven for 10 minutes.

Note: The thicker the fish fillets the longer you may need to bake your fish.

Delicious! And surprisingly easy. I didn’t have old bay seasoning and adobo seasoning so I had to improvise. I used a teaspoon of Cajun seasoning and a dash of cumin and turmeric instead and still turned out mouth watering. Love love love it! I want to experiment and try with other meats like thin pieces of chicken.

Hi Karina, I have the chicken version on the blog, thanks for sharing your improvise! I appreciate the feedback.

Can you use frozen spinach instead of fresh?

This recipe is both super easy and delicious! I tried it once with thin cut chicken breasts and it was just as wonderful! I also add a few extras sometimes, like mushrooms and onions, to give it even more substance. This has been added to my regular menu rotation.

      That is wonderful!

Love this recipe. It is easy and delicious. I did spray the spinach with olive oil spray and left out the butter. Sprinkled extra grated Parmesan on top. Served it over brown rice. Yummy!

      Sounds delish, Cheryl!

This was really good! I used Mahi Mahi as that’s what I had. Aside from adding Panko on top, I followed the recipe as written. The panko added a nice crunch, so I’d do it again. Thanks!

Good to know it works with other fish!

I cut the sauce in half and spread it around on top. I still used the same amount of seasonings and cheese. We felt like we were dining in the FINEST restaurant. Absolutely DELICIOUS!!!
Only reason I made half the cheesy sauce is, unfortunately, lactose issues. Surprised it was still plenty and creamy
