How to make this fresh spinach and chicken recipe?

  1. Preheat oven to 500°F. Lightly spray a 13 by 9-inch baking pan with cooking spray.
  2. Pack the fresh spinach onto the bottom of the baking dish and top with uncooked chicken breasts.
  3. Spread the creamy sauce mixture evenly over the top and sprinkle 1 cup of grated cheese over the top.
  4. Bake in the preheated oven for 18-20 minutes or until spinach shrinks and chicken breasts cook thoroughly.

  • 1 lb chicken breasts thinly sliced
  • 8 oz fresh spinach
  • 1 cup Monterey Jack cheese grated

Creamy Sauce

  • 1/2 cup mayo
  • 1/2 cup parmesan cheese grated
  • 1/2 cup sour cream
  • 1/2 tsp ground black pepper
  • 1 tsp garlic salt

I baked this dish at 375 Degrees for 40 minutes. Did not cut the chicken breasts in half. Added some marinated artichoke hearts over the spinach. Serves with penne pasta. Excellent flavor! It is a keeper.

This recipe was sooo easy and sooo good. I was so skeptical of cooking at 500 but I decided to go for it. Perfect temp. A great recipe and so easy to modify for your individual taste. This is absolutely added to the rotation. Thank you for a great receipt.

We like spice so I used pepper jack cheese. It was delicious and SO EASY! I thought it was going to be too much spinach, but it cooked down to the perfect amount. We will definitely be adding this in to our rotation.

Wasn’t sure that the 500 degree setting was right but confirmed by reading comments. Turned out perfect though I did put on broil for about two minutes to brown cheese. Trying to eat keto and just served this with pan of asparagus I added last 8 minutes of cooking. Husband and daughter loved it! Will definitely make again!

my husband asked me to make this again for tonight’s dinner..he has never done that before. the frenches onion rings were a great addition. i have a really bad back pain and dinner is not easy 4 me.but this dish was so quick to put together

this was very good.i used frozen spinach thawed.cooked up a shalot and some onion added the spinach.topped it w/pepper jack and swiss.once it was done i put on some french’s onion rings.everything was cooked thru in 20 min.perfect
