  • 8 oz fresh spinach
  • 1 cup Monterey Jack cheese grated

Creamy Sauce

  • 1/2 cup mayo
  • 1/2 cup parmesan cheese grated
  • 1/2 cup sour cream
  • 1/2 tsp ground black pepper
  • 1 tsp garlic salt

Instructions

      Hi Paula, I think you could but the only concern would be over marinading the chicken pieces since they are fairly thin here.

      Hi Terry, depending on how much fresh spinach you use it will get watery on the bottom. I assume if you use frozen spinach and squeeze out the liquid prior to baking would make it a lot more drier.

      Hi Esther, Asiago, Romano, and Pecorino cheeses are all great substitutes for Parmesan. You’ll want a hard aged cheese, really.

      I’d cook it on the lower rack, Annie so it doesn’t get as brown.
