  • 8 oz fresh spinach
  • 1 cup Monterey Jack cheese grated

Creamy Sauce

  • 1/2 cup mayo
  • 1/2 cup parmesan cheese grated
  • 1/2 cup sour cream
  • 1/2 tsp ground black pepper
  • 1 tsp garlic salt

Instructions

    Can you use mozzarella cheese instead?

      I think Mozzarella will work it just may be stringy.

    I have a huge bag of spinach I need to use by today. No chicken breasts on hand but I just went to Costco and got a rotisserie chicken. I want to shred the chicken and make this. I have done the other way. Several times. It’s delicious! I’m thinking of doing maybe 400 degrees for 25 min since the chicken is already cooked. Do you think that will work? Maybe 350?

      Hi Rose, I haven’t tried this dish in the crockpot and not sure if I recommend it since the spinach can get quite watery.
