  • 8 oz fresh spinach
  • 1 cup Monterey Jack cheese grated

Creamy Sauce

  • 1/2 cup mayo
  • 1/2 cup parmesan cheese grated
  • 1/2 cup sour cream
  • 1/2 tsp ground black pepper
  • 1 tsp garlic salt

Instructions

  • Preheat oven to 500°F. Lightly spray a 13 by 9-inch baking pan with cooking spray.

    Tried this recipe tonight to change things up! I used Chicken Thighs instead of Breast meat. It turned out so juicy! Next time I think I’ll add cooked bacon on top on the sauce then the cheese. Which speaking of the cheese I only had Mozzarella so I used that instesd. It turned out so yummy as well. Overall I can see myself making this again!!

    1-Was I suppose to mix the parmesan cheese with the cream sauce or was the parmesan cheese suppose to sprinkled on by itself?
    2- Setting the oven at 500 accurate? I have never went above 425 before???

      Hi Denise, the parmesan cheese, sour cream, and mayo would be the creamy mixture that you spread over the chicken. Then the grated Monterey Jack cheese would be sprinkled on top. And yes 500°F would be correct however, you could decrease the oven temperature per preference, the high temp wilts the spinach and leaves a nice cheese crust on the dish.

    This recipe is very simple and delicious but I still don’t understand when I would put the Monterey jack cheese in. For me I have to have a recipe that makes sense or else I don’t feel confident about cooking. If someone could let me know when to add the Monterey jack that would be great or even correct the recipe that would be even better.

      Hi Kathleen, thank you for trying the creamy spinach chicken dish! The cheese gets put on at step three after you spread the creamy mixture over the chicken breasts. My apology I didn’t call it Monterey Jack cheese in the instructions, but rather grated cheese, perhaps that’s what threw you off? I do have it listed in the ingredient list as MJ cheese.
