We recently moved down south and like Chick-fil-A, Popeyes, is a big thing here! The chicken sandwiches were limited to 2 per car at one location in this Southern state. So, if a long drive-thru or limit put on a piece of chicken doesn’t tell you something, I will– it’s good! Good enough to make a Popeyes Chicken Sandwich Copycat Recipe!

So my research was on and you can believe that I watched a video from Popeyes Restaurant on behind the scenes of Popeyes Chicken to create this fried chicken recipe. So, it’s been created just for you, who wants to make a Popeyes Chicken Sandwich at home!

The process of making chicken at Popeyes is easy. The chicken is first marinated, then dipped into a thick yellow batter that gets breaded with flour before it hits the oil. Since Popeyes uses MSG in their fried chicken recipe I needed to test and test to get close enough results. I wasn’t interested in other chicken recipes it had to be done like Popeyes or it wasn’t legitimate.

How Popeyes Chicken Sandwich Recipe Was Created:

First things first I already knew my quick-meat tenderizer would work because it’s my standby for marinating chicken quickly. Baking soda and vinegar is the secret to getting meat soft fast with the addition of salt! Furthermore, I wanted an egg slurry as seen in the Popeyes video. It was bright orange and yellow so you know it has to be eggs and some coloring enhancer, which Turmeric helped out with. Which, by the way, thanks to my Chinese Chicken Fingers Recipe for laying down the base to my wet batter.

Last but not least the flour had to be seasoned right to finish off the chicken. This part was challenging since I had the crust but the flavor was not quite there at first. As a result, I actually bought MSG (which is called Accent food enhancer) to experiment with the flavors and had to work on yet another couple of batches to go without it. If we’re making a homemade Popeyes chicken sandwich at home it needs to better-for-you! So, MSG was out and more salt came into play to substitute for the MSG.

Ingredients

Chicken Marinade:

  • 2 1/2 lbs chicken breasts (3 chicken breasts)
  • 1 tsp seasoned salt (Lawrys)
  • 1 tsp baking soda
  • 2 Tbsp white distilled vinegar
  • 2 cups water

Wet Batter:

  • 4 eggs
  • 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/4 cup buttermilk
  • 1 tsp Turmeric

Breading:

  • 2 1/2 cups flour
  • 1/2 cup cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp cayenne pepper
  • 1 Tbsp seasoned salt
  • 3 tsp salt
  • 1 tsp adobo seasoning
  • 2 tsp white pepper
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder and onion powder
  • 2 Tbsp sugar

Chicken Sandwich:

  • 12 brioche buns (toasted)
  • 12 oz hamburger dill pickles (sliced)
  • 4 cups canola oil for deep frying
  • 1/2 cup mayo (divided)

Instructions

How To Make Popeyes Chicken Sandwich at Home:

    Slice each chicken breast in half crosswise. Then each piece in half to make 4 fillets from each chicken breast. (You should have 12 pieces all together.) Pound the pieces with a meat mallet to 1/2" thickness if needed.
  • marinate chicken breasts in water, baking soda, seasoned salt, and vinegar solution
    Marinate the chicken in the chicken marinade for 20 minutes.
  • Meanwhile, make the wet batter; set aside. In another bowl combine the breading ingredients and set aside. Start pre-heating the oil over medium heat in a deep frying pan to 350°F.
  • Drain the chicken from the marinade. Dip each piece into the egg batter then into the breading. Coat the chicken well and shake off any excess flour.
  • Fry 3-4 pieces of chicken at a time (about 5 minutes per batch.) Drain on paper towels.

    To Make Sandwiches: spread 1 tbsp of mayo on each bun. Place 2 pickles on the bottom bun and top with fried chicken. Enjoy!

Notes

  • Toast Buns in Skillet: place bun side down onto a pre-heated skillet over high heat and toast the insides only. 
  • Toast Buns in the Oven: place buns side up and broil until toasted. 
  • Pickles: bread and chips pickles tend to be too sweet. Look for dill pickles or barrel pickles. 
  • Mayo: Dukes Mayo works really well here. 
  • How To Get Shaggy Skin on Crispy Chicken: use a deep bowl and slap and fold the breading into the chicken and press down firmly. Rotate and repeat 2 more times. Shake off any excess flour and the chicken should resemble a crumbly texture.

Can I substitute Adobo Seasoning?

I do not recommend omitting the adobo seasoning here. Since I omitted the msg the chicken needed flavoring and Adobo seasoning really enhanced the chicken flavor. Adobo is basically an all-purpose seasoning made from pepper, garlic powder, salt, sugar, turmeric, and oregano. To omit the spice simply use 1/4 tsp of each spice mentioned.

How To Store Leftover Crispy Fried Chicken Sandwiches?

This recipe makes 12 chicken sandwiches. If you have leftovers they reheat well the next day for a quick lunch or chicken dinner. Be sure to drain the pickles well before making the sandwich to prevent a soggy chicken sandwich later.

To reheat: place leftover prepared chicken sandwiches onto a plate. Microwave each sandwich over hi-power for 30-60 seconds or until hot.

  1. Marinate the Chicken.
  2. Make the wet batter.
  3. Mix the dry ingredients.
  4. Coat the chicken.
  5. Repeat with the remaining chicken breast fillets.
  6. Fry in oil.
  7. Drain the chicken on paper towels.
  8. Finished. Put in toasted Brioche Buns with barrel pickles and mayo!

Tips for Crispy Fried Chicken:

  1. Drizzle some wet batter into the flour breading to resemble crumbs on your chicken pieces. Once you start dredging the flour the breading will get crumbier.
  2. Cornstarch helps with the crispiness factor.
  3. Skip the baking soda for the breading and use self-rising flour, for fewer ingredients to use.
  4. Wet batter helps with creating the shaggy skin on crispy fried chicken.
