Search for a Banana Chocolate Chip Muffins recipe no more! These healthy banana muffins are so airy, light and fluffy and who would have guessed mayonnaise would be a part of the ingredient list! 

That’s right mayonnaise, and overly ripe mashed bananas are the only wet ingredients for these banana muffins, making these even more straightforward than you may have thought. The riper the banana, the better, as the starch level of a ripe banana changes to simple sugars, making a riper banana much sweeter and much easier to mash. So overly ripe bananas are a must to achieve moist and delicious results.

Do not worry; there is no mayonnaise taste in these tasty muffins whatsoever! Besides, mayonnaise is really just egg whites and vinegar, which often appear together in cake recipes. Feel free to add nuts or chocolate chips.

Ingredients For Moist Banana Muffins:
  • 2 (4 oz) semi-sweet square bars, cut into chunks
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 4 overly ripe bananas  
  • 3/4 cup mayonnaise

Directions to make Banana Chocolate Chip Muffins:

To begin, heat oven 375 degrees F. Line 18 muffin cups with baking cup paper.

Then, in a large bowl whisk together the flour, sugars, baking powder, and baking soda.

In a separate bowl mash bananas until mushy and wet; add the mayonnaise and whisk well. After that, add to dry ingredients and stir everything together until the flour is fully incorporated.

Fold in 1 cup of the semi-sweet chocolate chunks into the batter  (reserving 1/3 cup for the tops.)

Furthermore, fill each lined muffin cup about 3/4 full using a 1/4 cup measuring scoop. Then Garnish each muffin cup with an additional few pieces of the chocolate chunks.

Banana Chocolate Chips Muffins

Finally, bake for 20-25 minutes or until done.

I garnished with extra chocolate chunks during baking, but that’s optional.

      Hi Kelly, Mayo is basically oil so it probably helps with the moistening factor.

    Made these today. Super moist and delicious. I would suggest baking at 350 not the 375 suggested. The bottoms were almost burned when done. When I checked earlier the tops didn’t spring back so left them in for 25 minutes. I baked on middle rack and don’t consider my oven to be overly hot. Will absolutely make them again will just reduce heat
