Almost every Ukrainian makes a creamy cucumber tomato salad! It’s such an easy salad to make from tomatoes and cucumbers! A staple tomato salad to go by when harvest kicks in!
Even children love this salad! It’s one of my sons favorites! This is the easiest thing to whip up when you have a harvest of garden tomatoes and cucumbers that need to be used up! There is an oil-based version that Ukrainians make too, but this is our families take on the cucumber tomato salad with mom’s pickled tomatoes!
Ingredients:
- 4 medium tomatoes, chopped
- 2 cucumbers, halved and sliced
- 1/2 onion, sliced
- 3 tbsp mayonnaise
- 1/4 cup sour cream
- 1 tsp vinegar
- 1/8 tsp sugar
- salt & pepper to taste
How to make Creamy Cucumber Tomato salad:
1. Combine the tomatoes, cucumbers and onions into a bowl. (Store in the refrigerator until serving at this point, if needed.)
2. Add in the mayo, sour cream, salt, sugar and vinegar and toss everything together right before serving.
