This Monterey Chicken isn’t on the Chili’s menu anymore, but you can still make one of the easiest and tastiest bbq chicken recipes out there! Seared chicken breasts are smothered in bbq sauce and gooey cheese with crisp bacon making the ultimate bbq chicken dinner and it tastes like a restaurant dish!

Monterey Chicken was what Chili’s used to serve on their menu but it is now discontinued. Some recipes call for 4 ingredients like chicken, bbq sauce, Monterey Jack cheese and bacon. And although those are the key ingredients the spices on the chicken will give you that restaurant style chicken crust, once searing!

This chicken breast recipe is so EASY! There’s really nothing to it and it calls for simple pantry ingredients. Don’t let the simple ingredients fool you though, one bite is loaded with so much flavor, it’s like eating restaurant chicken. It doesn’t even have to be baked! Just thoroughly cook on each side until done and serve. Baking the chicken breasts makes a great make-ahead option but isn’t really necessary if your making it right away for dinner. It’s amazing how bbq, chicken and cheese can take something so simple and make it taste so delicious!

Do I have to use Monterey Jack Cheese for Monterey Chicken?

No, different cheeses like mozzarella or a Mexican cheese blend will work in place for Monterey Jack cheese.

Can I make Monterey Chicken on the skillet?

Yes! Monterey Chicken can certainly be made, simply in the skillet. Searing the chicken over high heat is good for browning the outside quick, but if you want to cook thoroughly your chicken breasts, lower the heat to a medium temparature setting and make sure the chicken cooks through. Here’s Alyssa’s skillet version on the Monterey chicken.

How can I make Monterey Chicken ahead of time?

Simply sear the meat over high heat. Spoon bbq sauce over the bottom of a baking dish and place partially cooked chicken breasts onto the sauce. Smother more bbq sauce over the top and sprinkle with cheese and  crumbled bacon. Cover and keep refrigerated until ready to use.  When ready to use, bake in a preheated oven for 20-25 minutes. Can bake over a bed of these refrigerator mashed potatoes.

How to make Monterey Chicken-

  1. Season the chicken breasts with salt, pepper and paprika on both sides. Set aside.
  2. Heat an oven safe skillet over high heat. Sear each side of chicken in 1 Tbsp of oil for 2-3 min on each side.
  3. Spoon 1 heading tbsp of bbq sauce and 2 heaping tbsp of grated cheese over each chicken breast. Top with bacon crumbs.
  4. Place into the oven and broil until cheese melts (up-to 5 min over low broil.)
  5. Garnish with diced tomatoes and scallions, if desired. (Still good without it.)

Ingredients

  • 3 chicken breasts sliced in half
  • 1/2 cup bbq sauce
  • 3/4 cup Monterey Jack cheese grated
  • 3 slices cooked bacon crumbled
  • 1 Roma tomato diced
  • 3 tbsp scallions sliced
  • 1 tbsp canola oil for frying
  • salt, pepper and paprika, to taste

Instructions

  • Season the chicken breasts with salt, pepper and paprika on both sides. Set aside.
  • Heat an oven safe skillet over high heat. Sear each side of chicken in 1 Tbsp of oil for 2-3 min on each side.
  • Spoon 1 heading tbsp of bbq sauce and 2 heaping tbsp of grated cheese over each chicken breast. Top with bacon crumbs.
  • Place into the oven and broil until cheese melts (up-to 5 min over low broil.)
  • Garnish with diced tomatoes and scallions, if desired. (Still good without it.)

Notes

NOTE: Can use different kinds of grated cheeses. This bbq chicken is still good without scallions or tomatoes. 
TO MAKE AHEAD: Season and sear chicken breasts as directed. Spoon a thin layer of bbq sauce over the bottom of a baking dish. Spoon bbq sauce and grated cheese over the top of the chicken breasts and top with bacon crumbs. Keep refrigerated until needed. Bake in a pre-heated 400° F oven for 20-25 min. Garnish with tomatoes and scallions.
