  • 8 oz fresh spinach
  • 1 cup Monterey Jack cheese grated

Creamy Sauce

  • 1/2 cup mayo
  • 1/2 cup parmesan cheese grated
  • 1/2 cup sour cream
  • 1/2 tsp ground black pepper
  • 1 tsp garlic salt

Instructions

    We get the asparagus as thin as we can, no thick stalks. I don’t think we had to extend the cooking time.

    So yummy and so flexible. We’ve done the recipe with spinach, but also with asparagus. We tried adding curry powder and it was delicious. Will be trying it with fish soon. So easy to prep , cooks quickly and 1 carb. What’s not to like. Thanks so much.

      With asparagus, cooked covered at 375 for 30 minutes and then 10 minutes uncovered. Keep checking until the asparagus is done.We added a tsp. of curry powder. Delicious!!!

    Just made this and everybody loved it! The cook time was perfect. I saw that you had thinner slices of chicken breast fillets so I sliced my chicken to look like yours in the photo, worked out great! I also used mozzarella cheese since that’s what I had on hand but I think this will still work out great with any white cheese. Thanks for the recipe!

    I absolutely LOVE your recipe! I make it once a week. I did read the recipe incorrectly and used 2 cups of jack cheese instead of one cup and have made it this way ever since. It is wonderful! It is so easy and really fancy looking with the browned cheese and the spinach showing through at the edges. I can’t imagine using only 1 cup of cheese. Also, one time I couldn’t get the jack cheese I usually get, so I used pepper jack cheese instead. Really good and not too spicy!
