Wild Hog Recipes

My husband enjoys hunting with the boys, so, we process wild hogs every year. They are leaner than domestic pigs so I usually buy uncured bacon (with no-nitrates) from the store. You can still make hams, lard, and homemade sausage using wild hogs. My favorite wild hog recipes is this Wild Hog Breakfast Sausage, rendering wild hog lard, and making ground wild hog meat, then freezing it in 1-pound bags for stuffed peppers and sweet and sour meatballs. Wild hog bones make a great stock and the meat makes great chunks for rice pilafs and soups. I especially love pork in cabbage rolls and ground up in meatballs or Pelmeni Dumplings.
