Seafood Recipes

We live hours away from the sea, so fish is not sustainable for us in the long-run. However, when we do bring fish home, we try to buy high-quality seafood. Occasionally our boys go fishing and catch catfish, bass, and smaller fish that I simply prepare by breading and frying.

Since we eat seafood sparsely, I mainly cook with salmon or a white fish fillet like bass or tilapia, on occasion. Over the years I learned a couple simple cooking techniques and stuck with it. Oven-baked fish is the easiest for me! I’ll make Ranch Baked Fish, Creamy Baked Tilapia Spinach Casserole, and this amazing creamy dill Salmon. Cured Salmon is a weakness of mine, when cured right you can add it to Sushi recipes or eat it over bread. Frozen shrimp and imitation crab meat are delicious in dips or tossed in salads. I also love making these Shrimp Quesadillas. What I want to say is find a couple of your favorite seafood recipes and stick with it. The fancier the recipes get the less likely you’ll want to incorporate seafood and seafood is a good protein source to give up! -Chef Alyona
