Egg cookery was no small thing in culinary school! We learned how to make, mayonnaise, fried eggs, the perfect simmered eggs (hard boiled) poached eggs, scrambled eggs, the French rolled, Soufflé, and flat omelets. It’s no wonder they need a whole category! Sunny-side-up eggs are a favorite, you don’t have to flip them and easy-eggs only cook for 10 seconds then slide right off the pan. Eggs aren’t just for breakfast, they go well in savory main dishes like fried rice, over a rice bowl, and in many soups like this Ukrainian Soup (Rossolnik)!
