This Easy Tomato Soup Recipe is the only homemade tomato soup I make! It makes the FASTEST lunch or dinner! Made in ONE-POT and cooked under 20 minutes!

Tomato soup became an instant favorite after having it at the Nordstrom Cafe. Its so scrumptious and easy! A dump and ready lunch or quick dinner to make and even children devour this! I like my tomato soup with some pulp so my hand blender comes in very handy but if you like yours smoother just blend longer. I easily converted my mother into liking this soup! It’s really one of the quickest soup recipes to make especially when you have tomatoes sitting in your pantry!

What kind of tomatoes can I use for Tomato Soup?

This recipe works best with canned tomatoes. Stewed tomatoes, plum tomatoes and diced tomatoes suit this recipe best and a blender is advised to use. If using tomato juice or sauce no blending is needed. If using Fresh tomatoes Roma would work best since they have more flesh than juice.

What side goes best with Tomato Soup?

The best side to make is grilled cheese or toasted baguette slices. Something crunchy pairs best since tomato soup is typically a puree.

Ingredients:

  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 4 (15oz) cans of Stewed tomatoes or 2 (28oz) of whole peeled tomatoes
  • 2 1/2 cups chicken stock
  • 1 tsp salt
  • 1 tsp sugar
  • 1/2 tsp ground pepper
  • 1/2 cup heavy cream
  • 1 tbsp dried basil (or small bunch of fresh basil)

(TIP: I used water and chicken bullion powder for stock.) 

Step-by-step tutorial:

1. Sauté garlic in olive oil until fragrant (about 1 min) in a medium sized pot. Add the tomatoes (with liquid) and slightly break up.

2. Then add in the stock, salt, pepper and sugar; bring to a boil and simmer 15 min.

3. Pulse soup a few times or until desired consistency, using a hand blender. Add in the basil and cream.

4. Garnish with parmesan cheese before serving.
