Healthy Peanut Butter Cookies

These healthy peanut butter cookies have oatmeal, Craisins and a multi-grain blend that makes these healthier than your typical peanut butter oatmeal cookies! 

When I was gifted a multi-grain mix I wanted to use it up and what better way than to grind them up? Cookies it was! However, mixing some into your favorite bread recipe is another great way to use up those grains, just add a bit more yeast since whole grain tends to be heavier!

Healthy Peanut Butter Cookies

This cookie recipe calls for a healthy blend of oats, barley, couscous and quinoa but any grains that are sitting around your pantry will work, like flax seeds, spelt or any really! Just grind them up and use in partial place of flour. My husband favors these cookies and even the choir lady who tried said they were the best cookies ever! So, believe it or not healthy can actually taste pretty good.

Ingredients:

  • 1 cup creamy peanut butter
  • 4 tbsp butter, soft
  • 1 cup brown sugar
  • 1/2 white sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 tsp salt
  • 1/8 tsp ground cinnamon
  • 2 tsp baking soda
  • 1 cup grains, grinded (I used oatmeal, couscous, quinoa and barley)
  • 1 cup all-purpose flour
  • 1 cup oatmeal, whole
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup raisins
  • 1/2 cup craisins

How to make Healthy Peanut Butter Cookies:

1. Beat the butters and sugars until fluffy.

2. Beat in the eggs and vanilla until combined. Set aside.

3. Grind the grains and sift into the flour. Add in the salt, cinnamon, and baking soda.

4. Slowly beat in the flour mixture to the peanut butter mixture until combined.

5. Beat in the oats and fold in the raisins, craisins and chocolate chips.

6. Scoop out about a tablespoon of cookie dough onto lined baking sheets and lightly flatten.

Note: Dough will be slightly sticky so use water to dip your scooping utensil in.

7. Bake in a preheated 350 degree oven for 8-10 minutes. Cool.

Notes

Note: Can use flour or oatmeal in place of the multi-grains.

These cookies do not even look like they have healthy ingredients added in! I love that grinding the grains causes them to be so invisible. My daughter is very picky and I will have to try grinding in secret ingredients! 😉

Grinding the grains is definitely a great way to incorporate those grains into your food and these cookies don’t really give off a grain like taste. If you ever get to make these, do let me know how they turned out for you:)
