These healthy peanut butter cookies are so good its hard to tell they’re healthy cookies! They’re loaded with oatmeal, grains, chocolate chips and minimum butter!  


Healthy cookies don’t sound so appealing and healthy oatmeal cookies sound like they have raisins in it. But these cookies are amazing! In fact, my husband requests these cookies and he’s not so fond of sugar! I love the lean approach here, and the fact that peanut butter works in place of the butter called for in most recipes!

This cookie recipe all started, when I was gifted abread which is another great way to use up grains!

Healthy Peanut Butter Cookies:

  • 1 cup peanut butter
  • 4 tbsp softened butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 cup multi-grains (I used oatmeal, couscous, quinoa and barley)
  • 1 tsp salt
  • 1/8 tsp ground cinnamon
  • 2 tsp baking soda
  • 1 cup all-purpose flour
  • 1 cup old-fashioned oatmeal
  • 1 cup chocolate chips
  • 1/2 cup raisins
  • 1/2 cup craisins


How to make Healthy Peanut Butter Cookies:

  • Beat the butters and sugars until fluffy. Beat in the eggs and vanilla until combined. Set aside.
  • Grind the grains and sift into the flour. Add in the salt, cinnamon, and baking soda.
  • Slowly beat in the flour mixture to the peanut butter mixture until combined.
  • Beat in the oats and fold in the raisins, craisins and chocolate chips.
  • Scoop a tablespoon of cookie dough onto lined cookie sheets and lightly flatten. Bake in a preheated 350°F oven for 8-10 minutes.


Note: Can use flour, any grains or oatmeal in place of the multi-grains.

Can I make cookies without eggs?

The protein in eggs are like the binding ingredient, working somewhat like glue in cookies. Making them without it can crumble and dry out the cookies, as eggs help with moisture too. The good news is, I recently discovered that unsalted chickpea liquid from canned chickpeas makes the perfect egg white substitute (protein)! In-fact, you can beat a meringue from it and it will thicken! Tell me that’s not an interesting egg substitute? I wish all the people with egg allergies knew!


  1. Use additional peanut butter for the butter called for!
  2. Swap out different grains that you may have sitting around.
  3. Use all brown or granulated sugar!
  4. Omit the flour and use additional grains for a gluten-free variation!

    These cookies do not even look like they have healthy ingredients added in! I love that grinding the grains causes them to be so invisible. My daughter is very picky and I will have to try grinding in secret ingredients! 😉

      Grinding the grains is definitely a great way to incorporate those grains into your food and these cookies don’t really give off a grain like taste. If you ever get to make these, do let me know how they turned out for you:)
