Rossolnik soup is a dill pickle Russian soup. Ukrainians and Russian canned cucumbers and then used them for this kind of soup.

There’s something about the combination of flavors in this soup though… Pickles, rice, tender pork, sour cream, and mayo. Yep, that’s right mayo and sour cream really just complete everything to this already delicious soup so don’t even think of skipping on those ingredients. A grain called “перлова крупа” (also known as barley) is originally used for this soup, but rice makes a great substitute. I happened to use homemade pickles for this time around but you can certainly use store-bought pickles with amazing results. Just be sure to choose a kosher dill pickle that you enjoy eating, preferably a mild kind, not too sour, sweet, or salty. Both variations work, although I still highly recommend homemade over store-bought as some brands can be overwhelming at times (plus you know how your pickles were seasoned). But don’t worry the pickles are simmered in water for some time so any harsh flavors will mellow out anyways, and don’t think your soup will taste like the jarred stuff-it won’t. This soup is one of the many favorites that I just keep coming back to, I don’t think I can ever get sick of this one. Enjoy!

Ingredients For Pickle Soup:

  • 2 lbs pickles (kosher dill)
  • 1 lb pork
  • 5 potatoes
  • 1 carrot
  • 1 onion
  • 1/3 cup white rice
  • 3 bay leaves
  • 3 tbsp dill
  • 1/2 tsp paprika
  • 1/2 tsp ground black pepper
  • 2 teaspoons salt
  • 1 tbsp Vegeta (all-purpose seasoning)
  • 2 tbsp mayo
  • 1/4 cup sour cream
  • 20 cups water

1.) In a large pot bring 20 cups of water to a boil.

2.) Cut meat into about 2-inch chunks and season with salt & pepper to taste. Finely dice the pickles.

3.) Add the diced pickles, cubed meat and bay leaves into the water; reduce the heat to medium and simmer for 1 hr and 10 min.

4.) Meanwhile, grate the carrot, dice the onion, and cube peeled and washed potatoes.

5.) Heat 5 tbsp of oil over med-hi heat in a large non-stick skillet. Add the carrot & onion and sauté until tender. Then add paprika; stir and add to the pot of water.

6.) Add rice to the pot of water and continue boiling over medium heat for 30 min.

7.) Then add the potatoes, salt, ground pepper, and the Vegeta; boil for another 25 min and turn off the stove.

8.) Stir the may & sour cream together.

9.) Add the sour cream mixture and dill to the soup and allow soup to sit covered for a few minutes.

10.) Serve with more sour cream if desired and some fresh bread, enjoy!

    I heard about this soup while watching a movie. When I looked up what Rassolnik is, I thought to myself, ” I must try that!”. I came across your recipe and I am glad I did. Its one of my favorites now.
