A chicken-based soup with plump homemade dumplings all made in one-pot! This chicken dumpling soup has simple ingredients, tastes delicious, and happens to be kid-friendly! A soup to keep in your meal rotation!
This recipe was shared by my mother-in-law but with some alternations, this is what I came to. It also goes by the name of Halusky (галушка) which can be a soft noodle or dumpling dish typically from Eastern Europe. But with such simple and easygoing ingredients you don’t have to be European to attempt this tasty soup! I was tempted to add cream and flour to the soup but it’s delicious the way it is. Homemade dumplings aren’t that complicated to make and while your soup simmers (probably the time it takes potatoes to boil) you can have ready dumplings and then from there they only require about 5 minutes or so of cooking. A delicious soup to try!
INGREDIENTS:
- 1 Chicken breast, diced
- 1 large onion, diced
- 2 tsp salt, divided
- 1/2 tsp black pepper
- 1/4 cup olive oil
- 8 cups broth (or water and 1/2 tbsp of chicken bullion powder)
- 1/3 cup dill
- 6 cloves garlic, crushed
DUMPLINGS:
- 1 3/4 cups buttermilk
- 1 tsp baking soda
- 3 cups flour + 3 TBSP
DIRECTIONS:
1. In a large pot sauté chicken and onion with 1 tsp of salt and 1/2 tsp of pepper in 1/4 cup of oil until onions are translucent.
2. Add in the broth and bring to a simmer over medium/low heat.
3. Meanwhile MAKE DUMPLINGS: Combine together the baking soda, buttermilk, 1 tsp of salt, and 3 cups plus 3 TBSP of flour. Form a dough. Transfer to a lightly floured surface and cut into 6 equal pieces (dough will be tacky just dust flour as your working.) Roll out each piece to a 22-inch log and cut 1-inch thick pieces.
4. Throw into the pot of boiling soup and cook for 5-7 minutes. Turn off the heat and add the dill and crushed garlic.
